Lemon Chicken

For 2 people ()


  • 2 Halves boneless chicken breast
  • 1 Lemon
  • 2 Egg Whites
  • 1 Packet ITG Pancake Mix
  • Salt & Pepper to taste

Lemon Chicken Directions

  1. Preheat oven to 350 degrees
  2. Whisk egg whites and juice of 1/4 lemon in a bowl large enough to dip the chicken
  3. Place pancake mix and seasoning in another bowl
  4. Dip the chicken in the egg white and then the pancake mix
  5. Sauté chicken in a non-stick fry pan until lightly brown on both sides
  6. Place pan in oven until chicken is done
  7. Squeeze desired amount of lemon over chicken and serve immediately
